As someone who recently backed the campaign, are these previews for things that are unlocked via stretch goals or are they already part of the existing offerings prior to a certain threshold of backers being reached?

They are already part of the existing offerings. Stretch goals in the sense that Kickstarter has have been replaced with achievements in BackerKit. There is no new content unlocked, just lore (previews) of the already planned material.
